Carnitas

Carnitas in the Instant Pot. I wanted to mix it up a bit and try something other than a soup. I knew I wanted to test a Carnitas recipe as that is one of our very favorites that I make in my Crock Pot. So I thought I'd give this a go and we ate every last bite. 

Carnitas
Pork loin (mine was 1.3lbs but next time I need bigger)
4 garlic cloves, whole and peeled
1 tsp cumin
1 tsp oregano
1 bay leaf
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp of ground chipotle pepper (more to taste)
1 white onion sliced

Brown pork in the Saute function with a little oil, sliced onion and garlic cloves.
Add all seasonings
3/4 cup of water
Close the Instant Pot, choose Meat function for 30 minutes (more time for bigger pieces of meat)

Serve with corn tortillas, fresh avocado, green onion, and I made a sour cream and lime juice sauce!

Crockpot Chalupas

I'm always looking for new crockpot recipes. I try to use my crockpot 2-3 times a week and love mixing up recipes to have a variation to our weekly menu. This week I found a Chalupa recipe that sounded pretty darn good, I knew it would need some tweaking to be the right taste but the base of the recipe was good. So I made some tweaks, I adjusted some flavors and the final product was exactly what I had hoped.

Crockpot Chalupas
2 lb pork loin
1 tbsp cumin
1 1/2 tbsp minced garlic
2 tsp Oregano
1/2 cup salsa verde
1 can pinto beans
1/2 diced onion

Mix cumin, garlic, oregano, salsa verde & diced onion
Place pork loin & pinto beans in crockpot
Pour spice mix over meat & beans
Cook on low for 6-8 hours
Serve with Tortillas, sour cream, cilantro, guacamole, lettuce, green onions, tomatoes...

Crock Pot BBQ Ribs/Crock Pot pulled chicken/pork

This has to be one of my all time favorite recipes as I've adapted it to many uses.

BBQ Sauce
1 Cup ketchup
1/3 cup molasses
2 tbsp white vinegar
1 tbsp worcestershire sauce
3 tsp chopped garlic

Mix sauce, pour over ribs, chicken, pork roast and cook on low 6-8 hours

If using ribs the rib meat literally falls off the bone. When using chicken/pork loin it turns into more of a pulled chicken, pulled pork type dish. I then serve with brussel sprouts and buttermilk biscuits.

***When I do as a pulled chicken/pork I chop up a red onion to cook in the crock pot as well.
